Wheat Berry Salad

This whole wheat berry salad has been a family favorite for years. A New York deli shared this prized recipe with us and we are pleased to share it with you.

Ingredients

  • 3 cups water


  • 1 cup wheat (grain) (quinoa works too)


  • 1 cup red onion, finely chopped


  • 2 tablespoons olive oil


  • 4 tablespoons olive oil


  • 2 tablespoons balsamic vinegar


  • 3 scallions, minced


  • 1/2 red bell pepper, finely chopped


  • 1 carrot, finely chopped


  • 1/2 teaspoon ground black pepper


  • Directions

    Add 1 cup of rinsed wheat berries to 3 cups of water. Add salt. Bring to a boil and simmer 45-60 minutes. Fluff with fork and let stand 5 minutes.

    While cooking wheat berries, saute red onion in 2 tablespoons of oil until the onions are translucent.

    In a large mixing bowl, combine the cooked wheat, sauted red onion, and remaining ingredients. Mix salad thoroughly. Refrigerate 1 hour. Serve cold and enjoy!
