Homemade Pancakes Recipe

How to make pancakes from scratch? Follow our 8 simple steps to make your own pancake mix from scratch for delicious buttermilk, banana, fluffy blueberry pancakes, and more.

Basic Homemade Pancake Recipe

Wet Ingredients - 1 egg, 1 cup milk, 1 teaspoon vanilla, and
2 tablespoons of butter, melted

Dry Ingredients - 1 cup flour, 3 tablespoons sugar, 1 tablespoon baking powder, 1/2 teaspoon salt.

  • Always add wet ingredients to dry ingredients. To do this make a well in the center of the dry mixture and pour in the wet mixture. Mix until well blended to make a simple homemade pancake batter from scratch.


  • Place a lightly greased frying pan over medium heat. Pour about 1/4 cup homemade pancake mix onto the griddle. Brown on both sides and serve hot with desired toppings. (TIP: To eat-on-the-go, without a sticky syrup mess, just add drops of syrup before the first turn while cooking.)


  • Pancakes freeze well so make a lot and freeze left overs. They can easily be reheated in the microwave or toaster for a quick breakfast.

    Like 'em thick or thin, just adjust (slowly) flour or milk according to your preference.

    How to make homemade buttermilk pancakes? Just substitute the milk for buttermilk or add 1 tablespoon of lemon juice to 1 measuring cup then fill the rest with milk. Let stand 5 minutes.

    How to make pancakes with more flavor? Popular additions include ground cinnamon, nutmeg, ginger, pumpkin pie spice, or allspice. Add whatever spices tempt your tastebuds. Just start with mixing in 1/4 teaspoon of each preferred spice then taste dry mix and adjust accordingly.

    If you are going to add fruit like applesauce then up the cinnamon, or pumpkin, then go for pumpkin pie spice. The point is to choose spices that will compliment the dish.

How to fold: The lighter mixture (i.e. blueberries) is placed on top of the heavier mixture, then the two are combined by passing a spatula down through the mixture, across the bottom, and up over the top.     How to Make Pancakes that are Fluffy

    Follow these tricks and you'll have a tall stack of irresistibly fluffy pancakes:

    Sift your dry ingredients.

    Make sure your wet ingredients are warm by heating up the milk (20 seconds max) and placing the egg in hot tap water for a few minutes.

    Don't overmix the dry and wet ingredients. Mix until just moistened (lumps okay).

    Let the batter sit a minimum of 10 minutes, at most, 1 hour. The longer the batter sits the fluffier the pancake.

    Homemade pancake mix is very versatile.

    So be creative with substitutes, they are not likely to hurt the recipe. For example, the butter can be substituted for applesauce, pumpkin puree, mashed banana, pudding, etc.

    How to make pancakes healthier?

    Any homemade pancake recipe can be better (for you) by substituting the all purpose flour for a whole grain flour. Whole wheat flour is an obvious substitute. Worried about compromising flavor and texture? Don't be! There are many types of whole wheat flours that are sweeter and lighter.
