Best Chicken Corn Chowder Recipe

Ingredients (Serves 8)

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch pieces


  • 1/2 cup onion, chopped


  • 2 cloves garlic, minced


  • 3 tablespoons butter


  • 2 cubes chicken bouillon


  • 1 cup hot water


  • 1 teaspoon ground cumin


  • 2 cups half-and-half cream


  • 2 cups Monterey Jack cheese, shredded


  • 2 (14.75 ounce) can cream-style corn


  • 1 (4 ounce) can diced green chilies


  • 1/8 teaspoon hot pepper sauce (more if you want it hotter)


  • 1 (15 ounce) can of diced tomatoes with green chilies


  • 1 can of diced potatoes


  • Fresh cilantro, diced, for garnish (optional)


  • Directions

    In a heavy bottomed pot, saute chicken, onion, and garlic in butter until chicken is no longer pink.

    In a small bowl, dissolve the bouillon in the hot water. Add it to the pot along with the cumin. Bring to a boil. Cover, reduce heat, and simmer for 5 minutes.

    Mix in cream, cheese, corn, chilies, hot pepper sauce, tomatoes, and potatoes. Cook the corn chowder, stirring frequently, until the cheese is melted. Garnish with cilantro (optional).


    Best New England Corn Chowder Recipe
    on the Stove or in a Crock Pot

    Ingredients (Serves 24)

  • 1 pound bacon, diced


  • 2 green bell peppers, de-seeded and chopped


  • 2 onions, chopped


  • 1 bunch fresh celery leaves


  • 6 (15 ounce) cans cream-style corn


  • 3 (15 ounce) cans whole kernel corn, drained


  • 5 cups water


  • 2 (12 fluid ounce) cans evaporated milk


  • Directions

    In a large skillet cook the bacon. Drain and reserve 1 tablespoon of bacon grease.

    Add bacon grease to a heavy bottomed pot. Over medium heat, lightly saute bell pepper, onion, and celery leaves in the grease until barely tender.

    Crumble the bacon into the pot. Add corn and water and slowly bring to a boil, over medium-high heat, stirring frequently. Stir in milk and heat gently, without bringing the chowder to a boil. Serve hot.

    Crock Pot Corn Chowder

    Use all of the above ingredients then do the following:

    Fry the bacon in a skillet. Set the bacon aside.

    Add the onion and bell peppers to the same skillet with the bacon drippings. Saute for 5 minutes. Then remove them from the skillet and drain well.

    Add the bacon, onion, and bell pepper along with the remaining ingredients to your crockpot. Cook on low for 6 - 7 hours.


    Easy Recipe for Spicy Potato Corn Chowder

    Ingredients (Serves 6)

  • 1/2 cup diced celery


  • 1 tablespoon olive oil


  • 1/2 cup chopped red onion


  • 1 (15 ounce) can potatoes


  • 1 (11 ounce) can creamed corn


  • 1 (15 ounce) can whole kernel corn


  • 1 (12 fluid ounce) can evaporated milk


  • 1/8 teaspoon ground cayenne pepper (or dash of tabasco sauce)


  • 1/4 teaspoon salt


  • 1 garlic clove, minced


  • shredded cheese, as topping (optional)


  • Directions

    In a large pot, saute celery in the oil. Add the remaining ingredients except the garlic and cheese.

    Bring the corn chowder to a boil then reduce heat and simmer for 20 minutes. Remove from heat and stir in garlic. Top with shredded cheese (optional) and serve warm.
