Fresh Blueberry Pancake Recipe

Ingredients (Makes 6)
Time: 20 minutes

  • 1 1/4 cups all-purpose flour (see whole wheat suggestions)


  • 1/2 teaspoon salt


  • 1 tablespoon baking powder


  • 1 tablespoon white sugar


  • 1 egg, at room temperature


  • 1 teaspoon vanilla (optional)


  • 1 tablespoon butter, melted (or vegetable oil)


  • 1 cup milk, warmed

  • 1/2 cup fresh blueberries (or frozen thawed to room temperature)

    For this blueberry pancake recipe to turn out perfect, fluffy, delicious pancakes it is important that the wet ingredients not be cold. Make sure your egg is at room temperature and your milk is warmed.

    In a large mixing bowl, sift together the flour, salt, baking powder, and sugar.

    In a small bowl, lightly whisk together the egg, vanilla, and melted butter. Then lightly mix in the warmed milk. Make a well in the center of the dry ingredients and pour in the egg mixture. Stir just until everything is moistened, taking care not to overmix the pancake batter (lumps are okay). Set aside for at least ten minutes. The longer the batter sits the fluffier the pancakes.

    Use a lightly greased griddle or frying pan over medium heat. Pour about 1/4 cup of pancake batter for each pancake. Sprinkle blueberries on the top of each pancake (doing this now rather than folding them into the batter avoids dying everything blue or smashing the berries during cooking). Brown on both sides and serve hot.
