Amaranth Plant

Originating in South America, these plants come in many species (approximately 60), but only three are commonly used for grain production:

These annual flowering plants are grown from seed. Fully grown these bushes will produce between 40,000 and 60,000 seeds that can be harvested as grain. Their colorful leaves are also edible and can be prepared and cooked like spinach.
